Mojito paired with Lechon Asado con Mojo
Both are grand centerpieces to any Cuban celebration making them the perfect combination for lunch or dinner. Use the below Mojito recipe while slow cooking the lechon asado for 8 hours. The refreshing cocktail will make time seem like it’s flying by, but make sure to resist the temptation of tasting your lechon before it’s done. Serve your lechon asado with white rice, black beans, and plantains and top off your Mojito to feel like you are back in Old Havana.
Mojito
2 parts The Glenlivet Caribbean Reserve
1 Lime Juice
3/4 Simple Syrup
10 mint leaves
1 Club soda topper
Glass-Collins
Method- Build in tin. Ice. Shake. Pour. Top with Club soda

Mofongo and Pina Colada are as recognizable to Puerto Rico as their beaches and Old San Juan. 1 ½ Real Coconut puree or 1 ½ Coco Lopez
3 parts Pineapple Juice
12 ice cubes (about 1 ½ cups)
Method – mix ingredients in BLENDER
Garnish – Pineapple wedge, lime wheel, cherry
