Just in time for National Cognac Day (June 4th) here are two new drinking experiences available at top venues in NYC. Whether you’re looking for a twist on a classic, or a fun pairing experience, Rémy Martin, offers a palette of unique flavor with every sip. Below are recipes for cocktails worth discovering at first class spots, and some you can create at home.

The Baccarat Hotel
Palette is a new offering at The Baccarat Hotel that not only allows you to experience Rémy Martin XO in a delicious cocktail but also comes with the perfect pairings to complement the taste of the Fine Champagne Cognac. Made with Rémy Martin XO, L’abricot liqueur, lemon juice, and egg white, the exquisite cocktail is accompanied with dried apricot with white chocolate and pistachio, macaron with apricot and saffron, and a Rémy Martin XO infused chocolate with gold-leaf, for the perfect opulent tasting experience with Rémy Martin XO. It is available for $50.

Palette at The Baccarat Hotel – $50

Ingredients:

Rémy Martin XO

Roulot L’Abricot liqueur

Lemon Juice

Egg White

Angostura

Bitters

Directions:
Shake 1½ oz Rémy Martin XO, 1 ½ oz du Roulot L’Abricot liqueur, ¾ oz lemon juice, ½ egg white, 2 dashes Angostura and 1 dash bitters.
Strain and pour over ice to serve.

The Modern
The Michelin-starred restaurant at the MOMA is offering a reserve cocktail with a twist. The Vieux Carré is now available on the menu and features hallmark ingredients like Angostura bitters, Benedictine, and sweet Vermouth. The Modern chose to make this smooth signature cocktail with Rémy Martin 1738 because of its rich flavor, classic reputation, and recognition with their clientele. It is available for $35.

Vieux Carré at The Modern – $35

Ingredients:

Rémy Martin 1738

2 dashes Angostura Bitters

3 dashes Peychaud’s Bitters

¼ oz Benedictine

¾ oz Carpano Antica Sweet Vermouth

1 oz Whistlepig 10 yr Rye Whiskey

Directions:
Combine 1 oz Rémy Martin 1738, 2 dashes Angostura Bitters, 3 dashes Peychaud’s Bitters, ¼ oz Benedictine, ¾ oz Carpano Antica Sweet Vermouth, 1 oz Whistlepig 10 yr Rye Whiskey. Add ice to the top and stir. Strain into a rocks glass with a large ice block. Garnish with a lemon twist and serve.

Cocktails for at-home

The Sidecar – a timeless and sophisticated cocktail with an enchanting story beginning in 1923 at The Ritz in Paris, or The Polanco, an exotic recreation of The Old Fashioned, that combines flavors of candied orange, lemon, and Rémy Martin XO to create a rich yet delicate cocktail.

Ingredients:

Rémy Martin 1738

Cointreau

Lemon

Directions:
Shake 1¼ oz Remy Martin 1738 with ½ oz lemon juice and 1 oz Cointreau with ice, then strain into your best coupe glass.

The Polanco

Ingredients:

Rémy Martin XO

Brown Sugar

Sparking Water

Lemon

Orange Orange Bitter

Dry Rhubarb Leaves

Directions:
Muddle a cube of brown sugar into ⅓ oz of sparkling water and add dashes of orange bitters. Pour 1¾ oz Rémy Martin XO over a full glass of ice. Gently stir and serve decorated with wedge of lemon, orange and dry rhubarb.
