NYC’s Kōbo Introduces New Fall Menu

Kōbo, is Chef/Restaurateur Ruben Rodriguez’s latest addition to his Nai Restaurant Group. The restaurant, located in New York City’s East Village, is introducing new fall dishes to its menu, leaning further into Chef’s Spanish roots, along with his love of Italian and Mediterranean flavors.
Kōbo’s menu celebrates simple ingredients and soulful cooking, honoring Chef Ruben’s Galician heritage. The menu features approachable priced plates, focusing on curated items “to-share” such as:
- Caponata over homemade focaccia, topped with cured sardines
- Broccoli Rabe with romesco and parmesan
Pastas, rotate seasonally and highlight:
- Chef Ruben’s signature Fideuà, a pasta form of paella from Spain’s Valencia region made with squid ink, octopus, baby squid and saffron
- Ravioli, filled with ricotta and delicata squash, garnished with pumpkin seeds
- Kōbo’s Lasagna is layered with spicy beef Bolognese and a curry béchamel, whilst the Pappardelle is served with spicy Italian sausage and pecorino.
Mains include:
- Oxtail, complemented by carrot purée, espigarelo and pine nuts
- Whole Market Fish served with a black olive tapenade and herbs
Desserts featured on the menu are:
- Tiramisu with mascarpone, amaretto, espresso, and cocoa powder
- Panna Cotta with buttermilk, Madagascar vanilla, and maple-sherry vinegar syrup
The Wine Program, designed by Service Director and Sommelier Raul Oleaga, is curated cohesively to match the restaurant’s concept; it leans Italian and Spanish, while simultaneously showcasing France, and other wine-producing regions from the Mediterranean.
Beverage Director Niko Hagerty has created a concise list of classic cocktails with a twist that include:
- Martini with gin and Moroccan black olive infused vermouth
- Kōbo Kiss which consists of gin, Cappelletti, vermouth, and Maraschino juice.
The restaurant is beautifully designed and showcases a 35-seat pink Brazilian quartzite bar and chef’s counter, lit by an elaborate wood chandelier composed of 1,117 handcrafted pieces of wood that form a shape reminiscent of a wave. The dining room is adorned with ceramics and vintage vases that complement the restaurant’s minimalistic interior; Rodriguez makes it a point to let the food do the talking.
Kōbo is a great spot to gather for date night, meet up with friends and enjoy family time. The large dining room accommodates up to 85 people, allowing the space to be very suitable for private and cooperate events, making it a perfect location to dine at for the upcoming holiday season.
