Football Sunday is synonymous with all the comfort-food goodness, which includes excess fat, carbs, grease, salt, and calories to weigh you down. If one of your New Year’s resolutions is to eat better, then the first big challenge of the year is very likely going to be on Super Bowl Sunday early next month. That’s when all the fried, savory finger foods come out to tempt everyone into giving up on their annual wellness goals.
For a healthy alternative try OSHEN’s fan fave Salmon Kebabs + Fresh Mango Salsa. Although this crowd-pleasing dish is pretty light, it won’t disappoint or skimp out on any flavors.

Preparation
Fire up the grill! We’re cooking up savory Salmon Kebabs with Fresh Mango Salsa. Specializing in international soul food, private chef Maranatha Leconte whips together this mouthwatering salmon recipe for her private clients – and now you can enjoy it too.
Prepare the fatty fish to your liking by either baking, pan frying, searing, or grilling. (Leconte prefers baking as it offers the same nutritional benefits in 15 minutes or less.) Did you know eating salmon has shown to help with reducing the risk of heart disease and lowering blood pressure while aiding in weight loss and heart health? Even better, salmon fillets – including these gourmet-style kebabs – are an excellent source of protein, vitamin b12, and omega-3s fatty acids.
Load up on fresh produce and follow Leconte’s simple three-step kebab recipe. Once the salmon is marinated, preparation and cook time should be less than half an hour. Pro tip: Pan fry the salmon on medium heat for maximum flavor and tenderness.
Step 1
Dice up all fresh produce and place into a large bowl. Throw in dry seasoning and extra virgin olive oil. Add the salmon chunks and mix together. Let marinate for at least two hours. For more flavor, consider marinating for up to 24 hours.
Step 2
Place the salmon chunks and produce on kebab skewers and bake at 375 degrees or pan fry in a large skillet on medium heat.
Step 3
For the salsa, simply dice the mango and add it into your favorite salsa mix. Similar to the salmon, let marinate for up to 24 hours.
