Sexy Fish Bar, London To Pop Up For One Night Only In New York And Singapore

In March, glamorous Mayfair hotspot Sexy Fish will undertake an ambitious and exciting cocktail menu launch. Launching on Monday, 5 March, the new menu will be unveiled on one day in three cocktail capitals: London, Singapore and New York, with the full list of brand new, sustainable serves from their cocktail cookbook.
The new cocktail menu will be unveiled globally, as well as in London, with one night only takeovers taking place at MACE, New York and 28 Hong Kong Street, Singapore on Monday, 5 March at 7pm local time. Sexy Fish Head Bartender Georgia Billing and bartenders Patricia Lozano Peral and Dario Trentini will be travelling to Manhattan‘s East Village, working with MACE‘s renowned mixologist Nico de Soto and his team.
MACE bar launched in 2015, and by 2017, was named the 42nd Best Bar in The World by the World‘s 50 Best Bar Awards. The brick-walled space will be transformed into a sumptuous lounge bar, with hints of the artwork displayed at Sexy Fish. Local customers and visitors will be able to sample the entire Sexy Fish menu, as the team bring the opulence of Mayfair to Manhattan’s East Village for one night only.
Alongside the MACE pop-up, Sexy Fish Restaurant Director Daniel Smith, Senior Bartender Giovanni Tavano and Bar Manager Jerome Allaguillemette will travel to Asia’s cocktail capital Singapore, to takeover 28 Hong Kong Street.
The Sexy Fish team will ship the ingredients and glassware to both destinations, creating Sexy Fish bar pop-ups in New York City and Singapore to coincide with the London launch. A selection of Sexy Fish’s art will also be installed, providing an exclusive taste of glamorous Mayfair to Singaporeans and New Yorkers.
The menu at Sexy Fish, which will pop up in its entirety at both locations, will feature a renewed focus on sustainability. Over 10 months, the core Sexy Fish bar team of six expert mixologists have created a menu that replaces citrus, herbs and garnishes with a homemade range of tinctures, distillates, cordials, syrups and shrubs. These are mixed into the 21 new serves, adding depth of flavour and balance, all whilst retaining the sense of luxury for which the bar at Sexy Fish is synonymous. From March, guests will be able to enjoy the new menu over dinner, at the bar or late at night, when Sexy Fish becomes a late night drinking and dining spot, serving a unique late night menu created by Executive Chef Director, Bjoern Weissgerber.
The menu will pioneer a new era of cocktail culture by introducing an element of democratization; each distinct serve will come with a recipe for guests to remake at home. By removing the mystery behind the new cocktails, visitors to Sexy Fish can recreate the magic in their own home, with each unique vessel available to buy from the bar and full recipe and method breakdown for each drink detailed in the menu.
At Sexy Fish on Berkeley Square in Mayfair, Caprice Holdings’ Director of Bars Xavier Landais will host a launch party in The Coral Reef Room at Sexy Fish, resulting in a one day, one menu, three country launch, the likes of which the industry has never seen. On the menu launch, Xavier said:
“This menu took the best part of ten months to create, and the result is truly remarkable, something I’m very proud of. Our brief included three pointers: be as sustainable as possible, surprise our guests and create delicious cocktails.”
With drinks ranging from the graceful Japanese Kir, a gentle mix of Falernum and Koshu Grace White Wine, to the curious Neonach, a savoury serve of Hendrick’s Gin, Salmon, Basil, Fennel and Chilli Oil, the menu offers perfect serves for both cocktail amateurs and connoisseurs. Revisited classics, such as the Rocky Road Old Fashioned, features Buttered Chita Whisky, Biscuillate, Salt and Chocolate, and wildly extravagant mixes such as the Monolith, is created with Zacapa 23 Rum, Thyme, Chamomile, Balsamic, Rosemary and Lavender.
The Sexy Fish cocktail cookbook is full of stimulating concoctions to quench the senses and whet the appetite, whilst forging a future of sustainable bartending.
