The Caviar Russe Restaurant and Bar in Miami is now officially open, led by renowned Chef David Valencia, a veteran of Alain Ducasse’s global empire.  The menu features caviar, raw bar and crudo-inspired cuisine with Madison Avenue signatures. Chef Valencia also offers a variety of new caviar-inspired creations that represent the cultural diversity of Caviar Russe’s new home.

The restaurant provides an elaborate selection of caviar, in servings from 25 to 250 grams, featuring various decadent caviar assortments such as “The Classic” (Classic Caspian Sea Osetra, Siberian Sturgeon and Pacific Sturgeon) and “The Prestige” (Platinum Caspian Sea Osetra, Gold Caspian Sea Osetra, and Classic Osetra), accompanied by house-made crepe blinis, creme fraiche and chives allowing caviar aficionados to explore and taste a range of varieties.

Adding to the unrivaled caviar selection, there is also seasonal crudo, tartare and raw bar selections showcasing such delicacies as Bluefin Tuna, Santa Barbara Sea Urchin, and Florida Stone Crab.

For the ultimate luxury dining experience, Caviar Russe offers an indulgent multi-course Caviar Tasting Menu. Comprised of six different varieties of imported caviar presented as a tasting menu of composed dishes, each course will continuously evolve based on the season and on Chef Valencia’s inspiration of the finest local and imported ingredients.  The menu features dishes such as Bluefin Tuna with Nasturtium, Creme Fraiche, and Caspian Golden Osetra; King Crab with Avocado, Lemon, and Caspian Classic Osetra; Diver Sea Scallop served with Parsnip, Vadouvan, and Siberian Sturgeon. The Caviar Tasting Menu begins at $395 per person.

To complement the caviar and culinary offerings, Caviar Russe offers a curated wine and champagne list including distinct vintages of Dom Perignon Oenotheque, Taittinger Comtes De Champagne, and Krug Clos du Mesnil. The restaurant also presents an extensive vodka menu with more than 20 varieties representing nearly every major producer in the world. Caviar Russe also offers craft cocktails perfect for kicking off any evening.

The new space is designed by David Mexico, of the David Mexico Design Group NYC, and located on the ground lobby of the Four Seasons Towe.

The bar at Caviar Russe boasts an impressive Calacatta Gold marble arch and seating for seven facing the open kitchen. Guests will enjoy chic white leather and gold adorned bar stools, where crystal decanters hang as ceiling-suspended pendant lights provide a soft gold illumination.

A delicate hand-blown glass chandelier hanging from a gold-leafed dome serves as the centerpiece for the main dining room. Pearlescent Italian leather dining chairs with detailed tooling gather around the various marble tables throughout the space to provide separate conversation areas. Individual banquettes with caviar-inspired leather and tufted velvet backs provide additional privacy for intimate gatherings of two or more. Magnificent custom bronze pendant light fixtures surround the dining room, shaped like oversized bubbles, adding further warmth to the deftly curated mood.

Sheer window accents are also patterned to continue the caviar-and-champagne theme with a subtle spherical pattern that adds background drama.

For Mother’s Day chef Valencia’s has curated a divine menu in which all caviar selections will also be offered. Menu includes:

First – SMOKED SALMON: Beets, Herbs, Sourdough or LOBSTER SALAD: Heart of Palm, Black Truffle, Apple

Second – EGG: Crispy Potato, Poached Egg, Brioche or STEAK AND EGGS: Dry Aged Ribeye, Truffled Potato, Quail Egg or for an additional $20 guests can order FOIE GRAS TORCHON: Quince, Pistachio, Sunchoke.

Third – BERRIES AND CREAM: Shortbread, Mascarpone, Mint or SORBET: Seasonal Selection or for an additional $15 guests can order CHEESE: White Chocolate, Blackberry, Cherry.
