Hacienda Encantada Los Cabos

Guacamole
Hacienda Encantada Resort & Residences Artisanal Mexican Cheese Fondue from Baja:

Ingredients:

  • 80 grams of cheese mix
  • 130 grams of jumbo shrimp
  • 90 grams of rib-eye
  • Your choice of vegetables
  • 20 grams of chopped celery
  • 20 grams of laminated tomatoes
  • 15 grams of chopped radishes
  • 12 grams of onions

Preparation:
Grill your rib-eye with your vegetables and chop up the celery, tomatoes, radishes, and onions. In a volcanic stone, add shrimp flambéed with tequila, then your sliced rib-eye with vegetables and garnishing.

Marina Fiesta Los Cabos

Ingredients:
  • 1 avocado
  • 1 tomato
  • 1 chili pepper
  • 1 onion
  • 1 lemon
  • Cilantro
  • Dash of salt and pepper
Preparation: 
Remove the skin from the avocado and grind in a molcajete. Add your chopped ingredients to the molcajete then add salt and pepper. Garnish with a squeeze of lemon and stir the ingredients together.

Vista Encantada Los Cabos

Vista Encantada Spa Resort & Residences Three Cheese Pasta with Shrimp:
Ingredients:

  • 100 grams of fettuccinepasta
  • 40 grams of manchego cheese
  • 40 grams of cheddar cheese
  • 40 grams of mozzarella cheese
  • 5 grams of parmesan cheese
  • 120 grams of shrimp
  • 1 gram of parsley
  • 80 ml of heavy cream
  • Salt and pepper to taste  
Preparation:
Boil your water and add your fettuccine pasta. While waiting, sautée your shrimp until pink. In a pan, add the heavy cream and cheese. Stir until mixed evenly. Drain your pasta and add to the pan with the melted cheese along with your sautéed shrimp. Garnish with parmesan cheese, your chopped tomatoes and parsley.
