National Taco Day may come and go this week, but for most of us any day is perfect for a taco. It doesn’t even need to be a Tuesday. Hacienda Encantada’s Fish Tacos (above)
Ingredients:

  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1 cup of water
  • 2 eggs
  • 1 teaspoon of salt
  • 4 fish fillets cut into strips
  • 1 cup of oil

Preparation:
Mix the flour, baking powder, water, eggs, and salt in a bowl until you have a liquid paste. Add the fish fillets to the previous mixture and cover with the mixture.

Heat the oil over medium heat in a medium skillet and fry the fish fillets for 5 minutes or until cooked through and golden brown. Drain on absorbent paper. Add fish fillets to your tortillas and garish with your choosing. 

Marina Fiesta’s Shrimp Taco:
Ingredients:

  • 2 eggs
  • 1 1/2 cup wheat flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons salt with onion powder
  • 2 tablespoons grounded chipotle spices
  • 1/2 teaspoons grounded black pepper
  • 1/4 cup cornstarch
  • 12 large shrimp (cleaned & shelled)
  • Corn oil (for frying)

Preparation:
Prepare the shrimp with salt, pepper, and spices. Mix the shrimp with the flour and cornstarch and fry in the pan. Drain the shrimp and serve them in tortillas.

Vista Encantada’s New York Tacos
Ingredients:

  • 100 grams of a New York strip steak
  • 1 chopped onion
  • Orly pasta
  • Guacamole

Preparation: Heat your tortillas and set your oven to 250 degrees. Put your steak into the oven and cook until medium well. While your steak is cooking, boil water, and add your orly pasta. Chop your onion and fry in a pan for 3 minutes. Once your steak is done cooking, take out of the oven and slice dice into cubes. Prepare your tortilla, add your orly pasta, steak, onions, and guacamole.
