Chef Charlie’s Tips:
When it comes to meal preparations  Michelin-star Chef Charlie Mitchell of Clover Hill offers the following suggestions.

To cook the perfect turkey here are his tips:

    • Cook the white and dark meat separately.
    • Cook the Turkey crown at 425 degrees for about 1-1.5 hours for a 10lb Turkey. High heat will add a beautiful color to the skin and keep the meat from drying out.
    • Allow your Turkey to sit out at room temperature, a process known as tempering, for a few hours before roasting it to help it cook more evenly.
    • Try cooking turkey wings, legs and thighs in a covered pan at 325 degrees for about 2-3 hours separate from the breast.
    • Let your Turkey rest for at least 1 hour before carving – many rush this step. This helps to preserve the juices so it will not dry out.
    • Add any remaining Turkey drippings from your roasting pan directly to your gravy pot when preparing to help elevate the flavors and dish.
    • Season your green bean casserole while the beans are still warm, just prior to baking, to build even more flavor. Crackers make a great, and easy, topping for any green bean casserole – just crumble them up and add them on top 5-10 mins before it is done!
    • Mashed potatoes should always be prepared last! They are the first to get cold and can be tricky to reheat to the perfect consistency.
