Father’s Day Recipes For An Ideal Sunday Barbecue

Father’s Day is just around the corner and with the warm weather finally here, it is the perfect occasion for a Sunday barbecue with the entire family to celebrate dad.

To provide inspiration for a fresh and fun Father’s Day barbecue, Barilla shares two recipes highlighting their 100% Italian made Rustic Basil Pesto Sauce. Barilla’s Rustic Basil Pesto Sauce isn’t just the right pairing for pasta, the use of this flagrant product will take any typical barbecue dish to the next level that will be sure to impress any barbecue-loving dad.

Grilled Chicken Kebob with Barilla Rustic Basil Pesto (above)

Serves: 4-6

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients

1 jar Barilla Rustic Basil Pesto

1 red bell pepper, large, diced

1 medium yellow squash, cut in ¼-inch rounds

1 medium zucchini, cut in ¼-inch rounds

1 medium red onion, quartered

½ pound chicken breast, large diced

Salt and black pepper to taste

2 tablespoons extra virgin olive oil

10 8-inch wooden or metal skewers (soak wooden skewers in water for 1/2 hour)

Directions

  1. Preheat grill to high.
  2. Meanwhile build ten skewers, first with red pepper, chicken, then zucchini, chicken, yellow squash, chicken breast, and red onion.
  3. Continue until all ten skewers are filled then drizzle with olive oil.
  4. Season the skewers with salt and pepper then place them on the hot grill.
  5. Cook for 2-3 minutes per side allowing for beautiful grill marks to form.
  6. Remove skewers from the grill and place on a serving tray. Drizzle with pesto and enjoy!

Roasted Corn with Barilla Rustic Basil Pesto & Parmigiano Cheese

Serves: 4-6

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients

1 jar Barilla Rustic Basil Pesto

6 ears fresh corn, shucked

Salt to taste

½ cup Parmigiano-Reggiano cheese, grated

Directions

  1. Pre-heat grill and bring a large pot of water to a boil.
  2. When the water is boiling, season with salt and add corn; cook for 3-4 minutes or until almost fully cooked.
  3. Remove corn from the water and dry.
  4. Place the corn on the grill and char lightly. Remove from the grill and place on a platter.
  5. Top with pesto and cheese and dig in!
